Watermelon Feta Tomato Salad



Summer just wouldn’t be complete without sweet, juicy slices of yummy watermelon. It doesn’t matter how careful you are about taking bites, you will inevitably end up with light pink trails of sugary goodness streaming down your face — which when we were younger served as a delicious afterthought lip-lick and now serves as a perfect opportunity for an impromptu lip-lock with that someone special! Something else that comes with eating the juicy fruit as an adult is enjoying it in a more sophisticated manner. Our favorite is to pair it with vine ripened tomatoes, fresh cut chives and crumbled feta cheese. Yum! And it’s incredibly simple to throw together.





Ingredients:


4-5 medium orange or yellow tomatoes, chopped into ½ inch cubes (we sliced them in half and squeezed out the excess moisture before chopping)


¼ of a good sized seedless watermelon, chopped into ½ inch cubes


4-5 ounces of crumbled feta cheese


chives to taste, chopped into confetti-like pieces


salt and pepper to taste


extra virgin olive oil to taste


Directions:


Gently mix the tomatoes, watermelon, feta and chives in a bowl. Drizzle with extra virgin olive oil (about three times around the bowl), sprinkle with salt and pepper and enjoy!
